Cheat It Pizza for Two

So a friend calls and says that she is in the neighborhood, possibly 15 minutes away, and was just a wondering if she could stop by and…it’s lunch time! What to do????

Do not panic! Certainly it’s not worth it. It’s not hard to have something delicious on the table when a friend drops by.

My Cheat It Pizza is not only super-tasty but great for a late-night, quick-fix dinner or after-party snack when you just didn’t have enough time to eat, since you were too busy chatting everyone up. Or maybe you just are not good at eating and talking at the same time!

I keep flat bread in my freezer for just all of the occasions mentioned above – either a naan flat bread, pita bread or lavash. All will work. So the next time someone stops by unexpectedly or you just need a quick snack, here it is!

Cheat It Pizza
Prep: 15 minutes  Cook: 7 minutes
Makes 2 small pizzas for 2

¼ cup extra virgin olive oil
2 cloves garlic, minced
2 flat breads (naan, pita or lavash)
½ cup shredded Monterey jack cheese
2 ounces pre-sliced mushrooms
3 ounces smoked mozzarella cheese, thinly sliced
¾ cup halved grape tomatoes
Freshly ground black pepper, to taste
¼ cup fresh basil leaves

Preheat oven to 400°F. Stir together olive oil and garlic. Place flat breads on a baking sheet and brush with olive oil mixture. Bake in lower third of oven until golden and slightly crisp, about 3 minutes. Sprinkle evenly with jack cheese and top with mushrooms, mozzarella, tomatoes and a sprinkle of black pepper. Bake in lower third of oven until cheese is melting and tops are golden brown, about 4 minutes more. Cut into pieces and garnish with basil.

TIP: Serve with a green salad if you need to stretch it out into a real meal.

This pizza looks so yummy! I love that we can use flat bread instead of pizza dough. I can't wait to try it.

Any Flat bread is good but depending on the size of the bread you may need to double the toppings (so just have more on hand just in case) since the Naan ones that are in national grocery stores a bit on the small size.
