Super Bowl Sunday Guacamole

The countdown to the Super Bowl has officially started. My brother-in-law, Eddie, who is a 5th generation Texan, is staying home through the weekend to avoid the crazy crowds. He typically also stays away from the kitchen, but on this most sacred game day, Eddie ties on his annual apron strings and makes his signature guacamole.

He’s not alone in his love for avocados, though he calls them “gator pears.” Did you know that 53.5 million pounds of avocados will be consumed on Super Bowl Sunday? That’s nearly 6 ounces for every man, woman and child in the United States. It’s the avocado industry’s biggest day of the year. That said, it’s time to talk guacamole.

Mac & Cheese Night

Mac & Cheese is my generation's original comfort food. It was on home menus so often that it became a packaged food that our moms used for convenience. But many of us kids who grew up with Mac & Cheese from “the box” are now parents seeking the same comfort with a homemade spin.

We started a Mac & Cheese Night at the Hunter house when Benny and Nicky were babies and still carry on the tradition five years later. Our version changes with the kind of cheese, pasta and goodies we have in the house, but the classic recipe below is a good starting point. It can be made a day or two in advance and conveniently reheated for dinner and a few easy lunches.

Game On!

Tickets. Check. Jerseys. Check. Foam Fingers. Check. Stadium Food…. Forget about it.

There’s nothing better than a weekend game, especially when the Lakers and Knicks are playing. But there’s nothing worse than stadium food. Few would argue it’s easier, cheaper and tastier to have your own tailgate party at home. And a classic burger is always on the tailgate party menu for Ben and Nick. Set your kitchen table with your favorite team’s memorabilia and play “Tonight’s Gonna Be a Good Night” to make dinner fun!

No Resolutions

Each year we make resolutions that we break before the New Year really starts. It’s because we get caught up in the peer pressure of resolutions but struggle with the follow through. In other words, we set our expectations too high and fail.

So the Hunter family isn’t making resolutions this year. Instead we’re setting achievable goals for better eating, exercise and health. And like it or not, we’re sticking to them… just don’t say resolution because it’s a dirty word.

Prime Rib – A Royal Roast for Thanksgiving

Who says you have to cook a turkey for Thanksgiving? While my family usually succumbs to tradition and roasts a bird with dressing each year, we also enjoy a change every now and then. Besides, turkey is a bit over-rated, at least by my definition of what a special roast should be. It’s gotta scream special, be easy to prepare and tough to overcook.
