Cornish Game Hens: Perfect for One or Two Bites

While shopping in the grocery store the other day, I came across Cornish game hens. I have not roasted or even tasted the little guys in a couple of years. Not sure why not…they are a perfect protein solution as a quick dinner for one or two.

In a short period of time you have a crispy, tasty bird for dinner alone or with company that requires no heavy lifting in and out of the oven. In celebration of spring I’ve paired the hen with baby carrots roasted whole, alongside the bird. You could use regular slim carrots halved lengthwise.  Enjoy a little taste of Spring!

Sausages from Saylor’s

Okay, I know it does seem like I am on a tangent of sorts…sausage + pasta + tomatoes…agreed!

It just so happens that ½ mile down the street where I live is an amazing food shop called Saylor’s that is owned and run by a couple; he is Penn Dutch and she is Italian. You tell me, how could they not have amazing food and great sausage? It really was one of the reasons that I rented ye ole house.

Pasta – My Mood-Altering Meal

Oscar night! So excited, especially since I have been without a TV for weeks now. Soooo thought I would splurge and buy a new one. Big mistake.

After listening to the techie guys for about 1 ½ hours I thought I had made a wise choice…no go! The picture was horrible, no matter what I tried to do to correct the color, tint and sharpness. It had all of the latest stuff of what makes a great picture nowadays, or so I was told.

Scotch Eggs – True Comfort Food

Since I moved this past weekend I am looking for some true comfort food. A friend once made me Scotch eggs on a dreadful rainy day – the kind where the cold goes straight through your bones. Scotch eggs were the perfect remedy. They were crispy on the outside with delicious, tender sausage cradling the hard-boiled egg. Truly a perfect protein package.

Try a Kitchen Sink Dinner: Baked Stuffed Potatoes

Okay, I admit I have not been doing that much cooking for myself lately…well at least not what most people would consider a proper meal. Lately, it has been kitchen sink dinners (translation: whatever bits and pieces that are kicking around or still kicking in your fridge).

These bits are highly underrated. You will be surprised at how inventive you can be when you have limitations and with only a few good ingredients still standing. In my case, leftover ground bison meat (from the sliders I made last week), 3 baking potatoes, 1 shallot, garlic and pantry stuff….
