I was always told the best way to describe the difference between Creole and Cajun cooking is city food vs. country food. Some people say a Creole feeds one family with three chickens but a Cajun can feed three families with one chicken.

One thing’s for sure, the classic po’ boy, which began as a 5-cent lunch for poor boys, crosses all boundaries. Po' boys can be found on the menus of greasy spoons deep in the bayou to white-tablecloth restaurants in the heart of New Orleans. It’s delicious and very easy to make.

Mother’s Day Breakfast

I remember the first time I delivered a breakfast tray to my mom on Mother’s Day morning. I couldn’t have been more than eight years old. I don’t recall what I made, though I’m sure it was something simple. It certainly wasn’t a fancy tray of food, nor a gourmet one, but what I lacked in skill, I made up for in effort. I couldn’t remember ever seeing mom so happy.

Many years later, now a mom myself, I must admit I’m overjoyed to see my boys go out of their way to do the same.

I’ve always believed the first bite of every dish is the best bite. That’s why Andrew and I often skip the entrée at a restaurant and order appetizers and small plates only.

In fact, even when sharing an entrée, it’s a challenge for us to finish. It’s no wonder I’ve been enjoying the premiere season of Tony Bourdain’s show, The Taste ... a show about hooking people in a bite.

During our 12 days in Japan, we ate lots of delicious food, much of which, like nigiri zushi (hand-formed sushi), is designed to be a bite or two. But I came across a dish that was so good that the first bite took my breath away, and it got better as I finished the very last grain in my bowl. It made me wonder how I would survive without knowing how to make it at home.

Quiche, Baskets and Bunnies

There’s an old adage about men and quiche, which I don’t subscribe to because the men in my house love this custardy concoction. In fact, custard is one of the culinary basics Andrew considers essential to competency in the kitchen. He says, if you understand the milk to egg ratio, then you can make any flavor quiche you want – from savory to sweet.

The boys are in the stage of uncertainty about whether they believe in life’s guardians…Santa, the Tooth Fairy, Cupid and the Easter Bunny. Of course they’re smart enough to know that regardless of their suspicions, believing brings presents, treats and even cold hard cash.

A Simple Fall Salad

With Thanksgiving around the corner, it’s time to indulge in our favorite comfort foods. And with a large, decadent meal like Thanksgiving, a simple salad makes the perfect accompaniment.

This salad is simplicity defined. It was inspired by our friend, Vicki, who’s a pro at tossing a little of “this and that” together to make a healthy, delicious dinner in a snap.

Since there’s very little vinegar in the dressing, it also makes a wonderful companion to wine. Use caution when seasoning with salt as different brands of pecorino cheese have varying degrees of saltiness.
