A King Cake for Mardi Gras

At my house, Mardi Gras always caused a big debate. Are we going to have pancakes, doughnuts or King Cake? Now that everyone is grown up and my grandchildren get a vote, this King Cake easily wins but I suspect some members of the family might pick up a doughnut on their way to work or home from school.

The egg-free dough is easily prepared in a food processor or mixer and even very young children like to roll out, roll up, shape and taste a bite of the dough.

A Simple Fall Salad

With Thanksgiving around the corner, it’s time to indulge in our favorite comfort foods. And with a large, decadent meal like Thanksgiving, a simple salad makes the perfect accompaniment.

This salad is simplicity defined. It was inspired by our friend, Vicki, who’s a pro at tossing a little of “this and that” together to make a healthy, delicious dinner in a snap.

Since there’s very little vinegar in the dressing, it also makes a wonderful companion to wine. Use caution when seasoning with salt as different brands of pecorino cheese have varying degrees of saltiness.

Easy Holiday Tips from the Georgia Governor’s Mansion

Holly Chute was expecting 1,000 people for cookies and cider last night. And with more guests over the next two weeks, she will be baking 20,000 this holiday season.

Holly is the Executive Chef of Georgia’s Governor Nathan Deal. And Sunday was the tree lighting ceremony at the Governor’s Mansion, with cookies and hot and cold cider for all. Whether it’s for a large public function as this or an official state dinner, Holly knows a thing or two about entertaining.

She has cooked for royalty including Prince Philip and Princess Anne of the United Kingdom, Queen Beatrix of the Netherlands and Prince Hassan of Jordan; Presidents Jimmy Carter and Bill Clinton; many governors; and entertainers like musician Joe Cocker and comedian Jeff Foxworthy.

Fall Memories – Candied Pecans

When I was a little girl, we would pile into the family wagon (a Ford with “wood” paneling) and head to mamaw and papaw’s West Texas home for long weekends. Starting in mid-summer through the fall, my brother Eddie and I spent our afternoons gathering pecans from the backyard grove. We knew our efforts would be rewarded come Thanksgiving with Texas pecan pie.

Our boys may be years and miles away from my papaw’s backyard of pecan trees but I can still teach them the art of shelling and candying pecans.

Fancy pecans, candied with ginger and brown sugar, are a special fall treat. Package them in pretty jars and give as gifts, set around the house in small bowls as party treats, sprinkle over salads or mix with chopped fruit to sprinkle over ice cream for a quick and simple dessert. The boys love to snack on them all season long.
