Shellfish Dinner for One!

By Lori Powell

I often eat dinner alone and i will make it super-special with the foods that I love to devour, such as spicy shellfish made into comfort food (à la vodka sauce), and with a dash of health (whole grain pasta so you can [More...] eliminate the guilt factor)!

Also when cooking for one, shrimp is an easy pick since you can buy the little crustaceans by the piece and cook them up super quick…the crab is the extra embellishment that you can either go for or not.

Cheat It Pizza for Two

By Lori Powell

So a friend calls and says that she is in the neighborhood, possibly 15 minutes away, and was just a wondering if she could stop by and…it’s lunch time! What to do????

Do not panic! Certainly it’s not worth it. It’s not hard to have something delicious on the table when a friend drops by.

My Cheat It Pizza is not only super-tasty but great for a late-night, quick-fix dinner or after-party snack when you just didn’t have enough time to eat, since you were too busy chatting everyone up. Or maybe you just are not good at eating and talking at the same time!

I am always hopeful that we will have a bunch of trick-or-treaters and I am always surprised the next day by how much candy didn’t get gobbled up.

Soup for two! Plus Leftovers

By Lori Powell

Soup time is here. I had to turn the heat on yesterday. I realized that my hands had lost some of their feeling due to how cold my kitchen was without the oven on...which I must admit, is a rare thing. It would have been lovely to have my hands wrapped around a mug of homemade soup.

In my neck of the Hudson Valley, the arrival of fall carries with it the aroma of dried leaves (carpeting the floor of my front yard which I will have to address soon) and wood burning in someone’s fireplace or wood stove (I have neither and yearn for one or the other) with smoke that wafts in the direction of my house.

How to Dress a Burger

By Lori Powell

I love burgers for so many reasons. They are super-delicious, juicy patties that you can dress up or down, depending on your mood and what you might have on hand. You can easily make a burger for just one or two pretty quickly.
