I am hoping that all of our Special Fork audience is safe and sound and hunkered down, weathering the aftermath of this storm with good eats and good company!

As mentioned in prior blog posts, I keep a well-stocked larder and have an upright freezer that is usually at least halfway filled with edible gold. So, to insure the freezer stuff, I am one of the fortunate ones who owns a generator.

Long Day, Short Night

Lately I have been working into the evening Monday through Friday and then at least one day on the weekend. So I’m trying to get better at meal planning.

I love leftovers so that’s not the problem. I just don’t love the same dish for three nights in a row.

So I am trying to make things that I can transform easily into something else. One of my tricks is roasting a ton of vegetables -- roasted vegetables are one of fall and winter’s delights. All you need is a little olive oil, salt and pepper, and any fresh or dried herbs that you have kicking around, and you have a meal starter for a week’s worth of dinners.

My “Every Meal Solution” Recipe

Apples are everywhere at this time of the year, but is it me or is there a whole new crop of varieties out there?

One of my all-time favorites is the Honeycrisp (breeding is still not clearly determined). It’s large enough so you can make a meal out of it.

I’m not sure how it is in your neck of the woods but in mine, Honeycrisps are the size of softballs. They are the perfect combination of sweet, crunchy and refreshingly juicy. It’s a modern apple variety developed by the University of Minnesota to withstand cold climates.

More Kitchen Sink Dinners

I am a nut about having stuff on hand and it might just be the result of growing up in a large family of all boys. Four brothers! Second helpings – what is that? Never happened in our house and it was not until I started eating at friends’ houses that I was introduced to the term, leftovers, and what that was all about.

Shaved Raw Beet Salad

Since I just turned another year older, I am on a mission to eat healthier and to be more active. I’m writing this on the morning after my birthday, after a very rich dinner out.

My birthday dinner consisted of heritage Kurobuta pork short ribs on a very creamy buttery parsnip puree, with crispy fried Brussels sprouts and a lemon caper compound butter, all paired with a lovely red wine. I am a sucker for short ribs and especially pork ones. I figured with the pork shortage about to happen in 2013, I best have it while I can and I felt that this was on par with a celebratory dinner.
