What to Cook? Pantry to the Rescue!

Sometimes I come home from work and there’s nothing in the fridge to make for dinner. This is when a well-thought-out pantry can be a lifesaver. Unlike Sandy, whose beautiful kitchen we use to shoot our videos, I have a very small kitchen and space is at a premium. Therefore my pantry is designed for maximum versatility with the fewest number of ingredients.

The joke about a chef’s refrigerator is it’s filled with condiments, but nothing normal to eat like fruits, vegetables or meat. This is because condiments make everything taste better and because many of us shop for the immediate meal ahead instead of doing a weekly plan.

More Kitchen Sink Dinners

We all have those nights when we don’t have time to stop at the market and grab something to make for dinner that night. Mine was last night but fortunately I keep a well-stocked larder and can probably live from pantry (fridge/freezer/kitchen cabinet) for at least one month, anyway. No joke!

I am a nut about having stuff on hand and it might just be the result of growing up in a large family of all boys. Four brothers! Second helpings – what is that? Never happened in our house and it was not until I started eating at friends’ houses that I was introduced to the term, leftovers, and what that was all about.

Make your own Spice Blend

Dried herbs and spices are forever proliferating in my pantry, taunting me with their two-year shelf life. One great way to plow through those jostling jars is to make your own spice blends.

I knew my guy was a keeper when he coated chicken thighs with this all-purpose rub, which he employs on everything from bell peppers to skirt steak. Try it as a dry rub on a smoked pork butt, or mix it with a few glugs of olive oil for a wet rub that packs chicken breasts with flavor and seals in moisture.

What’s in your Pantry?

Around 3 or 4 p.m. PST weekdays, I cruise Twitter looking for people who “dk (don’t know) what to cook” and try to give them answers, tweeting as @specialforksndy.  Problem is, without a well-stocked pantry, it’s hard to act upon my Twitter suggestions, no matter how quick and easy the ideas.

Here are some of the staples I keep on hand so I can always make dinner, even if I haven’t gone to the supermarket. I’m not including the obvious: canned tomato products, chicken broth, pastas and other standards.
