I love Thanksgiving, because it’s the one holiday where the entire country comes together to prepare a meal with friends and family. Many people have their own ways to cook the turkey and make the mashed potatoes and stuffing, but sometimes, it’s fun to mix it up and add in a new recipe that complements your traditional standbys.

Roasted Delicata Squash with Quinoa, Feta and Apple is an impressive and beautiful addition to your Thanksgiving table. It’s a side dish that features fall ingredients such as winter squash, crunchy apples, juicy pomegranate seeds and freshly-harvested walnuts. Roasted Herb Chicken with Pistachio Salsa

Roasted chicken thighs are easy to make, but ordinary. Dress them up by rubbing an herb paste under the skin to season the meat and create a ton of flavor without a lot of work. It’s important to use fresh herbs when making the paste because fresh herbs have a brighter, cleaner flavor than dried ones.

Use a mortar and pestle or finely chop the herbs together to release the oils, intensifying the fragrance. This recipe uses chicken thighs but you could use skin-on chicken breast or even a whole chicken. The key is to separate the chicken skin from the flesh, leaving the sides of the skin attached, creating a pocket for the herbs, to seal in the flavor.

How to Chiffonade

When a recipe calls for “chiffonade,” it means to cut the ingredient – usually herbs such as basil or mint, or other flat, leafy greens – into thin strips. Chefs have a simple trick to accomplish this. Stack the leaves together, roll the leaves up lengthwise like a cigar and slice across the cigar with a sharp knife. In a Hurry?  Stir-Fry!

Investing in a wok is a great way to make delicious meals fast. You don't need special training to use a wok and create scrumptious Asian cuisine. And you don’t need a range with a gas burner either; just make sure to buy a flat-bottomed wok.

Woks aren't limited to Asian cuisine. In fact, if I’m in a hurry to leave the house in the morning, I often make scrambled eggs and veggies in a wok. It’s ready in minutes and cleanup is easy.

Today’s recipe is a stir-fry that takes minutes to make and is unique because it uses celery leaves. Often celery leaves are thrown away but they actually have a much stronger flavor than the celery stalk. The beef pairs very well with the cumin seeds and the addition of the celery leaves at the end give this dish a burst of flavor.
